Cranberry & Orange Log This is a fantastic alternative to our Christmas truffles if you don’t have time to spend rolling all the little balls. You will need: 1 Cup Organic Raw Cashews ½ Cup Organic Dates ¼ Cup Organic Raw Cacao Powder Rind of 1 orange (or ½ tsp orange extract) 1 Tbsp Coconut Oil ¼ Cup Dried Cranberries ¼ Cup Cacao Nibs Soak dates in boiling water for 10 minutes, drain. Alternatively soak them overnight in the juice from the orange for extra flavour. Blend dates, cashews, cacao powder, rind and coconut oil until the mixture starts to come together. Spelt Salad Delicious as is, or use as a base recipe and add roast veges or corn etc. You will need: 1 cup whole spelt (soaked overnight and gently simmered in water for approx. 40 minutes). 1 cup fresh mixed herbs, roughly chopped 1 cup cherry tomatoes Dressing: ¼ cup olive oil 2 Tbsp apple cider vinegar 2 tsp stoneground mustard 1 clove garlic, crushed Salt and pepper Whisk dressing ingredients together. Mix in tomatoes, herbs and cooled spelt.

Down to Earth Christmas Truffles The possibilities for these little truffles are endless! Use any variation of nuts, seeds, and dried fruit - also extra yummy with a few drops of organic peppermint extract. You will need: ½ cup almonds or cashew nuts 1 cup dessicated coconut 1/3 cup raw organic cacao powder ½ cup organic dates 2 Tbsp maple syrup (optional) 1 Tbsp coconut oil Pinch of Himalayan salt -Put nuts, coconut, cacao, dates and salt in a food processor. -Blend until mixture is crumbly. -Add maple syrup (or a little water if not using) and coconut oil. -Process until mixture comes together. -Roll into small balls. -Coat in cacao powder or coconut. -Refrigerate for a few hours.   Variations: Replace some of the coconut with cacao...

Gluten Free Coconut Cranberry Brownie This brownie makes a delicious treat! It is gluten free as well as dairy free. You will need: 3 eggs ½ cup organic raw sugar or coconut sugar ¼ cup rice flour ¼ cup tapioca flour ½ cup organic cocoa powder ½ cup dried cranberries 1 tsp vanilla extract 1 tsp xantham or guar gum ¼ tsp Himalayan salt 100g coconut oil, melted -Beat eggs and sugar until fluffy. -Mix dry ingredients together in a bowl. -Fold into egg mixture along with vanilla, cranberries and coconut oil. -Pour into a lined 18cm square tin and bake for 15-20 minutes at 160C (fanbake), or until just cooked.   Delicious served warm with a dollop of coconut yoghurt.

Down to Earth Lentils These lentils make a quick and easy dinner - serve them with some brown rice and fresh greens for a complete meal! You will need: 1 Cup Organic split red lentils (soaked for a day) 1 Onion, finely chopped 2 Tbsp Olive oil 2 tsp Cumin 1 tsp Turmeric 400g Tin organic chopped tomatoes 2 Cups Vegetable stock 1 Handful of fresh mint, or other herbs 1/2 Lemon Salt and Pepper Gently cook onion in the olive oil until soft, then add the cumin and turmeric.
