Use any variation of nuts, seeds, and dried fruit - also extra yummy with a few drops of organic peppermint extract. Gluten Free Coconut Cranberry Brownie This brownie makes a delicious treat! It is gluten free as well as dairy free. You will need: 3 eggs ½ cup organic raw sugar or coconut sugar ¼ cup rice flour ¼ cup tapioca flour ½ cup organic cocoa powder ½ cup dried cranberries 1 tsp vanilla extract 1 tsp xantham or guar gum ¼ tsp Himalayan salt 100g coconut oil, melted -Beat eggs and sugar until fluffy. -Mix dry ingredients together in a bowl. -Fold into egg mixture along with vanilla, cranberries and coconut oil. -Pour into a lined 18cm square tin and bake for 15-20 minutes at 160C (fanbake), or until just cooked.   Delicious served warm with a dollop of coconut yoghurt.
