Down to Earth Lentils
These lentils make a quick and easy dinner – serve them with some brown rice and fresh greens for a complete meal!
You will need:
- 1 Cup Organic split red lentils (soaked for a day)
- 1 Onion, finely chopped
- 2 Tbsp Olive oil
- 2 tsp Cumin
- 1 tsp Turmeric
- 400g Tin organic chopped tomatoes
- 2 Cups Vegetable stock
- 1 Handful of fresh mint, or other herbs
- 1/2 Lemon
- Salt and Pepper
Gently cook onion in the olive oil until soft, then add the cumin and turmeric. Cook this for a further 5 minutes then add the tomatoes and stock, simmer until the lentils are soft. Mix through chopped mint and the juice of the lemon. Season.
We like to serve with some brown rice and some fresh greens for a complete meal.
