Down to Earth Christmas Truffles

The possibilities for these little truffles are endless! Use any variation of nuts, seeds, and dried fruit – also extra yummy with a few drops of organic peppermint extract.

You will need:

  • ½ cup almonds or cashew nuts
  • 1 cup dessicated coconut
  • 1/3 cup raw organic cacao powder
  • ½ cup organic dates
  • 2 Tbsp maple syrup (optional)
  • 1 Tbsp coconut oil
  • Pinch of Himalayan salt

-Put nuts, coconut, cacao, dates and salt in a food processor.

-Blend until mixture is crumbly.

-Add maple syrup (or a little water if not using) and coconut oil.

-Process until mixture comes together.

-Roll into small balls.

-Coat in cacao powder or coconut.

-Refrigerate for a few hours.

 

Variations: Replace some of the coconut with cacao nibs for extra crunch, or use different dried fruit or seeds.
