Gluten Free Coconut Cranberry Brownie
This brownie makes a delicious treat! It is gluten free as well as dairy free.
You will need:
- 3 eggs
- ½ cup organic raw sugar or coconut sugar
- ¼ cup rice flour
- ¼ cup tapioca flour
- ½ cup organic cocoa powder
- ½ cup dried cranberries
- 1 tsp vanilla extract
- 1 tsp xantham or guar gum
- ¼ tsp Himalayan salt
- 100g coconut oil, melted
-Beat eggs and sugar until fluffy.
-Mix dry ingredients together in a bowl.
-Fold into egg mixture along with vanilla, cranberries and coconut oil.
-Pour into a lined 18cm square tin and bake for 15-20 minutes at 160C (fanbake), or until just cooked.
Delicious served warm with a dollop of coconut yoghurt.
