Spelt Salad

Spelt Salad

Delicious as is, or use as a base recipe and add roast veges or corn etc.

You will need:

  • 1 cup whole spelt (soaked overnight and gently simmered in water for approx. 40 minutes).
  • 1 cup fresh mixed herbs, roughly chopped
  • 1 cup cherry tomatoes

Dressing:

  • ¼ cup olive oil
  • 2 Tbsp apple cider vinegar
  • 2 tsp stoneground mustard
  • 1 clove garlic, crushed
  • Salt and pepper

Whisk dressing ingredients together.

Mix in tomatoes, herbs and cooled spelt.
