Spelt Salad
Delicious as is, or use as a base recipe and add roast veges or corn etc.
You will need:
- 1 cup whole spelt (soaked overnight and gently simmered in water for approx. 40 minutes).
- 1 cup fresh mixed herbs, roughly chopped
- 1 cup cherry tomatoes
Dressing:
- ¼ cup olive oil
- 2 Tbsp apple cider vinegar
- 2 tsp stoneground mustard
- 1 clove garlic, crushed
- Salt and pepper
Whisk dressing ingredients together.
Mix in tomatoes, herbs and cooled spelt.
