Recipe - Cauliflower Snacks with Kavita's Kitchen
You might be tempted to chuckle when we declare that one of our favourite flowers here at Down To Earth is the Cauli-flower. Okay sure it doesn't look great in a bouquet of blooms and we know it isn't likely to be found in a Florist, but it does provide for a delicious addition to any snack section of any recipe book.

This one here in-particular is a favourite. Written by Kavita Anand from Kavita's Kitchen, these cauliflower bites are a testament to her grandmothers kitchen and her love affair with spice.

Ingredients
  • 1 head cauliflower
Batter:
  • 1/2 cup flour
  • 1/2 tsp onion powder
  • 1 tsp cumin
  • 1/2 tsp garlic
  • Salt & pepper
  • 1/2 cup soy milk
  • 1/2 tsp baking powder
  • 1 tsp curry powder
  • Dash of water

Sauce:
  • 2 tbsp Kavita’s Kitchen Rogan Josh curry paste
  • 1 tbsp olive oil
  • 2 tsp maple syrup
  • 2 tsp tomato paste

Dipping sauce of choice to serve (e.g sweet chilli, mint yoghurt, etc)

Method:
  1. Cut cauliflower head into florets.
  2. Preheat the oven to 180 degrees Celcius.
  3. Mix all the batter ingredients together in a bowl.
  4. Coat the cauliflower florets in the batter and place on a lined baking tray. Bake for 20 minutes in the oven.
  5. Meanwhile mix together your sauce ingredients.
  6. Once the cauliflower has been in the oven for 20 minutes, brush each floret with the sauce. Make sure each floret is well coated then place back in the oven for another 15-20 minutes.

Serve with a dipping sauce of your choice and enjoy!
